Mandarin Orange Cake

This cake sounds weird, but trust me - it's yummy!
  • 2 cups sugar
  • 2 cups flour
  • 2 tsp baking soda
  • 2 - 15 oz cans mandarin oranges
  • 1 tsp salt
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup brown sugar
  • 4 tbsp milk
  • 4 tbsp butter
  1. Preheat oven to 325 degrees. Drain oranges saving 3 tbsp of juice to add to batter. Mix sugar, flour, baking soda, oranges and reserved juice, salt, eggs, and vanilla extract to blend, then beat for 3 minutes at medium speed. Pour into greased 13x9 pan and bake for 40-45 minutes.
  2. Bring brown sugar, milk, and butter to a boil (carmelize) and pour over warm cake. Serve with vanilla ice cream or cool whip.
